National Lemon Meringue Pie Day celebrates this sweet and tart pie that is made with a shortbread crust. The middle part is made with eggs, grated lemon rind, salt, sugar, lemon juice, water, cornstarch, vanilla extract, and flour. It is then topped with meringue which is basically beaten egg whites and sugar.

Elizabeth Coane Goodfellow (1767-1851), from Philadelphia, is said to have invented lemon meringue pie in the early 1800s. facts: California and Arizona produce 95% of the entire U.S. lemon crop. Lemon trees bloom and produce fruit year-round.
