National Gazpacho Day celebrates Gazpacho Soup Spanish vegetable soup that is also popular in Portugal and some Latin American countries. Gazpacho Soup, typically being served cold, is usually a summer dish, so we're not sure why it is celebrated in December. On pure speculation, perhaps this holiday originated in Latin America where December is one of the warmer months??
