About the Holiday

National Tapioca Day celebrates this starch that is derived from the bitter root of Manihot esculenta which is native to South America. Tapioca is typically used to thicken or add texture to foods especially tapioca pudding and is also used in making classic bubble tea. When cooked it becomes transparent and increases in size.
